Comparing Tex-mex/Cal-mex/new Mex to Authentic Mexican?

I am doing a project based around authentic Mexican Vs what many of us in the states think is mexican. What are some techniques/ingredients... that aren't found in authentic that many people today ociate closely with mexican?
